I love muffins and this easy cranberry apple muffins recipe is one of my favorites. They are both sweet, tart and moist and delicious! I used a recipe from one of my favorite cookbooks, Once Upon a Tart by Frank Mentesana and Jerome Audreau, who own Once Upon a Tart cafe in New York.
The book is filled with not only muffin recipes, but tarts both sweet and savory, soups, sandwiches, and cookies to name just of few of the delectable recipes in this wonderfully written book. I have had mine for at least 6 years now and have made many of the recipes but this is the one that I always come back to.
How to Make Cranberry Apple Muffins
Ingredients for Apple Cranberry Muffins
- 2 cups all purpose flour
- 3/4 teaspoon of baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 2 large eggs, room temperature
- 3/4 cup of vegetable oil, neutral oil, or olive oil
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 large Granny Smith apple cut into 1/2 inch cubes
- 1 cup fresh tart cranberries
- 2/3 cup chopped walnuts(optional)
Directions for Apple Cranberry Muffins
- 1. Preheat oven to 400 degrees F. Place rack in center of oven. If you are going to make 12 muffins lower the oven temperature to 375 F and watch so they do not burn.
- 2. Prepare your muffin pan.Spray muffin tin with non-stick cooking spray, smear with butter or use paper liners. Set aside.
- 3. Whisk flour, baking powder, salt and cinnamon in a small bowl, until combined.
- 4. In a large bowl, whisk eggs, then add sugar. Whisk the mixture until pale in color, then add oil and vanilla extract.
- 5. Gradually add dry ingredients to wet ingredients. Stir gently with a wooden spoon until just a little flour shows.
- 6.Then gently stir in fresh apples and fresh cranberries.
- 7. Spoon batter into prepared muffin cups. Bake muffins for 40 minutes in a preheated oven. For 6 large muffins, bake about 25 for 12 smaller ones, or until muffins are golden brown or a toothpick in the center of a muffin comes out clean.
- 8. Remove muffins from oven and let cool for a few minutes then turn out onto wire racks.

Variations & Tips
- Add a combination of apples, like Granny Smith and Honey Crisp.
- Used dried cranberries in combination with fresh cranberries.
- Add white or dark chocolate chips.
- Do not over mix the batter or you will have tough muffins.
How to store muffins
Wrap muffins in plastic wrap or tote in an airtight container. Muffins can also be frozen for up to 3 months.
