I love pumpkin, almost as much as I love hot chocolate. I am pretty sure that I could eat pumpkin pie everyday and never get tired of it. Recently I have been experimenting with pumpkin in other recipes, and I found this great recipe on Pinterest. It is fabulous! I won’t say that it will replace pumpkin pie in my diet but it is a delicious alternative. Since it is the weekend this may be a nice treat to whip up and relax with a good book, which is exactly my plan.
Pumpkin Pie White Hot Chocolate
3 cups whole milk
1 cup canned pumpkin puree
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon cloves
1/8 teaspoon nutmeg
1 teaspoon vanilla
4 ounces white chocolate (roughly chopped)
pinch salt
Directions:
1. Heat the milk, pumpkin puree, and spices in a sauce pan until it just starts to simmer and remove form heat.
2. Add the chocolate and stir until it has melted.
3. You could garnish this with whipped cream ad cinnamon.
4. Pour into mugs and enjoy!

I made this last fall and, while I loved the taste, I did not like the texture. I just made it again and strained it through cheesecloth. It's a lot creamier this way and doesn't have the grainy texture from the pumpkin. I put the cheesecloth in a colander, placed the colander in a bowl, and poured the entire pan in(I doubled the recipe). I poured that into a pitcher and when it cooled I poured it into a glass milk bottle. I seriously need to get a funnel for my kitchen. I made a huge mess but it was worth it.
