Scotcheroo Cereal Treats!

It is no secret that I love to bake, make treats and share with friends. I make these frequently, and this week I made them for a friends, school party. There are very EASY to make, basically 6 ingredients, can it get any easier? And are a step up from rice Krispie treats.

Once again, let me warn you, these are not for people who do not like sugar, high fructose corn syrup, peanut butter, chocolate or butterscotch!

Scotcheroos

Ingredients:

1 cup of sugar

1 cup of light corn syrup

1 cup of peanut butter

6 cups of rice krispies, or special K cereal

Topping

1 1/2 cups of semi sweet chocolate chips

1cup of butterscotch chips

Directions:

1. Bring sugar and corn syrup just to a boil over medium heat. You want to melt the sugar crystals but not bring to a rolling boil. This will cause the treats to become VERY hard.

2. Remove sugar mixture from stove and stir in peanut butter.

3.Pour mixture over 6 cups of cereal. Stir until coated.

4.Once mixed, pour mixture into either a 9×13 pan for thin treats, or an 8×8 pan for thick ones that has been sprayed with Pam. Pat down the mixture.

5. In small saucepan, melt butterscotch chips and chocolate chips together. Pour mixture over the cereal and spread to coat. Let cool, then cut and enjoy!

    WOOOO WHAT PICTURES! Oh dearest friend, these are going to have to be made in my kitchen for my sugar lover, RUBEN!!!!! I was so busy yesterday with my Etsy orders and had a bout of laryngitis that is actually bothering me still…but here I am to thank you for your wonderful comments and teeheee…am I the fairy godmother? teeeheee…we all are dearest, we all are.

    ARE YOU HAVING FUN THIS WEEKEND? ENJOYING THAT FAB HOME OF YOURS???? I am.

    OH NO Elizabeth!! You are not good for my waistline. I am making the carrot cake today and now you have me thinking I should make these too! I got off the hook going to the tourn. today my husband is taking my son (yippee day off) and I am going to catch up on the mounds of paperwork and then make a great dinner so when they come home, tired and weary I can treat them to something wonderful, homemmade and delicious. I can tell these would be a big hit with my kids ( and I will admit me too:) Thanks for another yummy recipe!!

    Just catching up, not after a busy weekend, but a very lazy one.
    YUMMEEEEEEEEEEEEEE! Want one. I was thinking of you yesterday as I am, for your sanity, sorry to say that I am off to Scotland in a few weeks. Do you want me to send you anything? I know you love it. We are up there for a week, an impulsive decision, as usual. It's been several years since I have been there and can't tell you how excited I am. I will be sure to take loads of pics for you. Where do you stay when you go?

The first peaches of the season. These fuzzy, swee The first peaches of the season. These fuzzy, sweet peaches take me back to summer days as a child. We would go blueberry and peach picking with my grandmother and fill bushels of peaches to take home for her to bake with and the can for the winter. I’m not sure how much help we were because I am pretty sure that we are our body weight in peaches. We were a sticky mess by the end of the day with a belly full of Michigan’s finest peaches.
