Sugar and Spice Almonds and Some Christmas Thoughts

And it came to pass in those days, that there went out a decree from Caesar Augustus, that all the world should be taxed. ( and this taxing was first made when Cyrenius was the governor of Syria.) and all went to be taxed, everyone into his own city.

And Joseph also went up from Galilee, out of the city of Nazareth, into Judea, unto the city of David, which is called Bethlehem;( because he was of the house and lineage of David)To be taxed with Mary his espoused wife, being great with child.

And so it was that, while they were there, the days were accomplished that she should be delivered.

And she brought forth her first born son, and wrapped him in swaddling clothes, and laid him in a manger; because there was no room for them at the inn.

Sugar and Spice Nuts

This is the last of my Christmas treats! Oh my goodness I am tired, as I said I think my plans were a little ambitious this year. But I managed to make almost everything that I wanted to. I made three and a half pounds of these nuts last night. They are easy and DELICIOUS!!! 

Ingredients

  • 3/4 cup corn syrup
  • 4 1/2 cups sugar
  • 1 cup water
  • 2 teaspoons ground cinnamon
  • 3 1/2 pounds pecan or almonds

Directions

Line a cookie sheet with aluminum foil or Silphat.

In a large heavy saucepan over medium heat, combine corn syrup, sugar, and water. Stir mixture only until sugar is completely moist. Let cook until mixture reaches 242 degrees F on a candy thermometer.

At that point, without stirring, immediately remove from heat and add cinnamon.  Then stir until mixture settles or stops boiling. Stir pecans or almonds into mixture all at once. Stir until all pecans are coated completely. Pour out onto a cookie sheet and allow to cool. Break into pieces and serve.

I packaged up almost all of these to give to my vet, dentist, friends, etc. I re- purposed a few of my old Christmas cards to make the decoration on the top.

    Elizabeth this is so beautiful and the sheep kissing her lamb was almost my undoing, it's so sweet! I'm as ready as I'll ever be for the holidays but looking forward to relaxing soon. I wish you and your family a lovely and warm Christmas Day!

    I still have not yet wrapped any presents so I know tomorrow will be hectic. Those nuts are my absolute favourite and I had no idea they would be so easy to make. You are a wonderful girl.

    What can I say but that this post is special to my heart. As the festivities approach, I am only reminded of the many times family gathered with treats, hugs, happiness and fond memories in the making. But now YOU ALL are my extended family for those near to me in family are no longer. THANK YOU for the kindness, the friendship and the CHOCOLATE AND CLOCK AND CROWN and all the other gestures of great friendship!!! Oh dearest, I am so behind, so utterly UNORGANIZED!!!
