On Mother’s Day all women deserve a special meal to celebrate them, in addition to their flowers or whatever gift you are giving them, after all we are all mother’s of the world, to kids, pets, friends, etc. If you cannot be with your mom because she is far away or you are not a mom (like me) than celebrate YOU!
Although I am not normally a breakfast fan (unless it contains sugar) I thought I would put together a few old and new recipes to make something that is easy and fun to serve. I should warn you, this menu is heavy on sweet dishes.

Remember to use a 6" or so springform pan because the 9" was definitely too big and there wasn't enough batter to go around… Rookie mistake on my part 🙂 but thought I should warn others…

I made the rookie mistake of using a 9" springform pan and the batter didn't make it all the way around easily… Maybe the author could clarify? But I'm guessing it should work well with a 6" one.

So sorry! I thought I made mention of that. In fact I have used a 6 inch for this recipe, but I make this often and have used larger pans also. The taste is the same, but the end result is that it is a thinner cake.

I just made this and it was delicious!!! I did use a 9 inch spring form pan, and it turned out fabulous and looked just like your picture; it did need to bake for 65 minutes but that may also be an issue with my oven.

I made the coffee cake this morning to serve at my church's coffee hour after the service. I wanted to use a 9" springform pan because I was planning on serving this to a lot of people with the thinking that I would just double the recipe and it would be fine. Big mistake that turned out to be; I had a huge mess in my oven when the cake was baking and the cake still hadn't finished baking after being in the oven for close to 2 hours. I like the thickness of the cake in the 6" pan, but would more than likely always be making it in a larger pan. Do you have any suggestions for how to alter the recipe to achieve the same thickness in a larger springform pan? Any advice is welcomed as I would like to redeem myself when I attempt to remake this?

Hello Jennifer,
I am not a professional baker, but here is my suggestion.
The recipe was made in a 9 in pan, obviously not as thick as when made in a 6 inch pan. The only thing I can suggest is if you want to make it in a 9 in pan and have it be thick, double the recipe but never fill your pan more than 2/3 full, otherwise it will go all over the oven. Use the extra batter to make an additional cake.

Do you have any suggestions for how to alter the recipe to accomodate a 9" springform pan? I made this coffee cake this morning and just doubled the recipe, but that turned out to be a disaster. I need to redeem myself after failing miserably, but don't know what I need to do in order to achieve the same thickness that you get with a 6" springform pan.

I am so very excited…I made this for Christmas (tomorrow)! I did alter/substitute the sugar for Splenda (both reg. & brown) due to my husband, my dad, and myself being diabetics. I am so anxious to see how it turned out. It's in the oven as I type this 🙂 I will definitely provide feedback!

No you are not being daft…there is no coffee in the recipe. Most breakfast cakes in the USA are called coffee cakes because you eat them while you drink coffee.
