Fluffy Pancakes with Strawberries

Hello! Happy Monday! Did you enjoy your weekend? My weekend flew bye. I could really use another day to get all for the things done that I need to before my guests get here. Oh well, I guess a few things will be left undone.

This morning to give myself the energy to stay on course I made these fabulous, light, fluffy, pancakes.

While I genuinely prefer them with Vermont maple syrup I thought I would try to eat a little healthy this morning, so I added sliced strawberries and a little powdered sugar. The result was delicious.

Fluffy Pancakes

adapted from  all recipes.com

Ingredients:

3/4 cup milk

2 tablespoons white vinegar

1 cup all purpose flour

2 tablespoons white sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 egg

2 tablespoons butter, melted

dash of cinnamon and nutmeg

cooking spray

Directions:

1. Combine milk with vinegar in medium bowl and set aside for 5 minutes to “sour.

2. Mix, flour, sugar, baking powder, baking soda, nutmeg, cinnamon and salt in large mixing bowl. Whisk egg and butter into sour milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

3. Heat large skillet over medium heat, and coat with cooking spray. Pour 1/4 cup full of batter onto skillet, let sit until bubbles appear on the surface. Flip with spatula and cook until browned on the other side.

If you like pancakes, than you may want to try these! As I said, they are light, fluffy, and delicious. I love the hint of spice, and the sweetness from the berries.

    I love pancakes! I haven't had pancakes in eight months or so and only eat them in the cooler months. We finally got rain! Two nights of thunderstorms and counting and my newly planted shrubs are saved. My gardens don't look very happy but there's always next year.

    My dear, dear friend, THESE LOOK FABULOUS! I must snatch this recipe for when the cold weather comes, Ruben will enjoy these. I am not a pancake person; growing up, when we had no money for meat, my mom would make pancakes and for me, they were just too heavy! BUT your idea to use fruit is FABULOUS!!!!

    Elizabeth, Your breakfast looks absolutely delicious! I do love pancakes, but usually only make them in the cooler months. I found a recipe years ago in an old Junior League cookbook. They have so much butter in the batter there is no need to coat the griddle. Healthy????? Probably not, but oh so good! Enjoy your guest! Bonnie

    Hi Elizabeth! Your pancakes look too delicious for words… and your photos are wonderful. I live in Australia and they are called "hot cakes" here.     And those are magnificent pancakes, I will try this recipe, Elizabeth…we like our pancakes very light. That's why I usually end up making crepes instead.
