Good morning! I don’t know about you but I am a homebody and never more so than in the winter, especially when the weather is as frigid as it has been the last few days. I think today we are supposed to have a “heat wave” and the temps will reach 16 so I shall be staying inside where it is nice and toasty.

As I mentioned yesterday in my post on Crock Pot soup, on days like this I love to enjoy the simple pleasures in life, a book, some magazines, and a comforting meal.

All of which I will be enjoying today, along with the delicious vegetable soup I made yesterday in the Crock Pot. It was quick, easy and of course piping hot when I returned home.
I made up the recipe using the vegetables that I had on hand, but you can add anything that you like or have, in case you are interested in trying it.

Easy Vegetable Soup
3 carrots peeled and cut into little chunks
2 potatoes cut into little chunks
1 head of cabbage chopped
1 bag of frozen green beans
1 medium onion diced
2 28 oz cans tomato puree or crushed tomatos
1 32 container of chicken stock/broth
sprinkle of Italian seasoning
salt and pepper
Place all chopped vegetables into the crock pot, add tomato puree, chicken stock, and seasonings. You want the vegetables to be mostly covered with liquid so add a little water if necessary. Cover and cook on low for 8 hours or high for 5. This was made using a 6 quart Crock Pot.
Serve with a sprinkling of Fontina cheese and crusty bread.

I haven't made soup yet this week, but I did get out the food professor and make humus. Oh, it's delicious.

Funny i was the opposite of a homebody but in the last few years, really much more into being home….and really am my happiest when I am:) I guess I have "been there, done that" and with a crazy fast paced world we live in, the refuge of home is a mighty nice sight for sore eyes!
Made lentil soup, finished Gone Girl and now starting The Chaperone and have been on a movie binge…so its all good!! Enjoy your "balmy" weather!
Tina, I could not agree with you more. For year and years I was the wanderer and now the happiest place I am is at home. I feel content! I have not read the Chaperone thank you for the recommendation!
I just love to stay home too. I did so yesterday and drew and make tomato/spinach soup! But today, we brave the cold to go out to teach and I am geared up, I am just waiting for my husband to be ready.

Sandy, I know exactly how you feel! I cannot leave the house if the wind is whipping at 30 mph and it is 6 for the high. It is downright frigid!

It's a balmy -9 outside right now and I'm not enjoying it. My face got burnt from the wind yesterday from being out with Dylan dog. I have a white bean and chicken chili recipe but not for my slow cooker. I need to see if I can't adapt it to the slow cooker so I don't have to soak the beans for 24 hours before hand. Let us know if you find a good recipe please!

I so agree with Tina. I love being at home. Sometimes I don't go out for 2-3 days. My kids are adults, I have everything I need right here, and unless girlfriends want to go to lunch I'm just happy doing my own thing, and I'm never bored. Never.
