Good morning! I think Spring is finally here. We had a fabulous and sunny weekend, what about you? The highlight was sitting in the sun with a light breeze and a good book. I have not done that in awhile and I needed it.
In addition to reading and relaxing you know I did a little baking. Lest you think I only consume a diet of sugar I also made several of these scrumptious salads. I really love salads and my favorites are ones that have fruits, and nuts in them.
This salad is EASY and delicious. I call it my Spring Fruit and Nut Salad.
Ingredients:
6 cups of a Choice of greens ( I use spinach and romaine)
1 green apple diced
1/8 cup of dried Cherries chopped
1/8 cup of crumbled blue cheese
1/8 cup of candied pecans** chopped
I use a vinaigrette or balsamic vinegar but obviously use what you like.
** I have several recipes for candied pecans but the fastest and easiest are made using maple syrup! Place a handful of pecans in a small nonstick skillet. When the nuts are toasted, and you can just smell them, add a douse of pure maple syrup. Stir to coat all of the nuts. Then pour onto a Silphat and separate.
As for the salad, tear greens and place into a large bowl, add apples, cherries, blue cheese and pecans, toss and plate. Add dressing and enjoy!

Oh this is what I eat regularly, but I use regular walnuts; I have to watch my sugar intake. Mine is:
fresh spinach
poached chicken
walnuts
pepitas
chopped apple
And I am addicted to the CRUNCH!

Your fruit and nut salad looks wonderful! I love salads, and eat them year 'round. I usually chop up whatever vegetables are hanging out in the crisper and add either roasted shrimp or chicken.
I might add a few roasted pine nuts. Have a wonderful week. Bonnie
What a tasty salad! I too add nuts and fruit to my salad for the crunch and to help fill me up:) Cranberries, almonds, walnuts, etc.. Cherries have an anti-inflammatory benefit .. great choice!
