Pumpkin Pancakes

Good morning! How was your weekend? I have had both a busy and a crazy one. My mom is visiting for a couple of weeks and we have been on a road trip, to a Christmas open house, buying and wrapping Christmas presents, baking, eating, reading, walking along the ocean and a few other thing. 

We also lost a lot of sleep, on Saturday night at 1:30 am all of the smoke detectors in the house went off, jolting us not only from a sound sleep but keeping us up for the next 3 hours. There was no fire, so we settled back into bed, a half an hour later the same thing. Let me tell you that it is just as jarring the second time and the third time and the fourth time as it is the first. Searching Google for some relief resulted in the two of us blasting all of the detectors with canned air at 2:30, vacuuming them at 3:00 and finally cutting the breaker to them at 3:30. Today I am the proud new owner of new smoke detectors! 

I thought since my poor mom was up wandering the house with me last night that she deserved a special treat for breakfast so I whipped up a batch of Pumpkin Spiced Pancakes.

There are a ton of great recipes for pumpkin pancakes on Pinterest but after a long night and about two hours of sleep I took the easy way out and simply adapted the recipe on the back of the Bisquick box. These pancakes are my new favorite Sunday breakfast, they are moist, fluffy and they taste just like a piece of  pumpkin pie. 

Pumpkin Pancakes with Toasted Pecans and Maple Syrup

Adapted from Bisquick

2 cups of Bisquick mix,

1 cup of milk

2 eggs

6 oz of pumpkin puree

1 teaspoon of cinnamon

1/2 teaspoon of cloves

1/4 teaspoon of ginger

1/4 teaspoon of nutmeg

optional:

pecans

maple syrup

Mix Bisquick, milk and eggs in a bowl, add pumpkin and the spices. Mix well.

Heat skillet over low-medium beat and once heated pour 1/4 cup measured in the pan to create the pancakes.

When finished garnish with pecans, butter and syrup. Enjoy.

    Those smoke detectors are HORRIBLE when they go off! Oh dear, good thing you got new ones. Who knows why they do this!

    I made these this morning. After I made the batter, I thought it was missing something… I think for pancakes there is always sugar in the mix (even when making pies, and muffins using pumpkin) so I added about 1/4 cup… next time I might add a little more. Over all they were really good.
