Creamy Rice Pudding with Summer Berries

Good morning! I hope that your week is getting off to a great start. I am doing everything I can to soak up the sun and remind myself that Spring is on its way, even though it is going to snow(AGAIN) on Wednesday. 

This past weekend while in search of a little bit of Spring I picked up a huge batch of strawberries. I had no idea what I was going to do with them but they were so tasty and smelled so wonderful I knew I could think of something.

The first thing that came to mind was this easy recipe for Strawberry Jam from Ina Garten. I added a few raspberries as well and it came out beautiful. However I am not really a person that eats jam so I though it would make a better sauce for something smooth and creamy, like ice cream or old fashioned rice pudding. Thankfully I had some leftover rice because the entire dessert came together in less than a half hour. 

Creamy Rice Pudding

3/4 cup sugar

1/3 cup of flour

1/4 tsp. salt

11/2 cups cold milk

1/2 cup heavy cream

3 eggs beaten

11/2 cups of cooked rice

1/2 tsp. vanilla bean paste

1/4 tsp. almond extract

In a saucepan mix together sugar, flour, salt, milk and heavy cream. Cook over medium-low heat, stirring continuously until mixture comes to a boil. Once mixture comes to a boil cook for an additional 2 to 3 minutes, make sure to stir at all times or the mixture will burn.

Remove pan from heat. Temper the 3 beaten eggs by adding 3/4 cup of the milk/sugar mixture to them and whisking to incorporate. Then pour the warm egg yolk mixture into the pan and mix well, add the rice and mix again until incorporated. Return to heat for an additional 3-4 minutes and mix well. Remove from heat and add the vanilla and the almond extract, mix to incorporate.

You can eat it warm or chill and then garnish with berries, whipped cream or whatever else you like.

This rice pudding is fabulous! It is rich, creamy and delicious, with notes of almond and vanilla. It is an old fashioned comfort food that tastes best warm if you want my opinion. The addition of the summer berries makes this an excellent dessert for Spring and Summer too.

    Precious Elizabeth! Oh I had a rushed morning yesterday and missed your post, but I see I am caught up now for today!

    Rice pudding….my goodness, does this give me a Proust-like experience. My mother made this for me weekly, à la Mexicaine….with lots of vanilla and cinnamon. But your version here looks fantastic, with berries!

    We too are finally getting a melt. Yesterday, it was 50! WOW, do we now have ponds to drive through on the roads, but bring it on!

    I just love rice pudding, but never can get it like my Moma made it. This recipe may be the one, her's was creamy and tasted almost like a custard..
