St.Patrick’s Day Chocolate Chip Pancakes

Happy St.Patrick’s Day to you! I hope that you had a wonderful weekend, filled with lots of sun and warm weather…no? Me neither but we can wish can’t we?

As I am not a drinker nor a lover of savory food I thought I would celebrate St. Patrick’s day with a few green pancakes. Not necessarily the most appetizing of colors but throw in a little dark chocolate and I promise the taste with make you forget about the color.

These scrumptious pancakes are light and fluffy with little bits of sweet molten chocolate. A morning treat to celebrate St.Patrick’s day or any other special occasion.

Chocolate Chip Pancakes

1 cup all purpose flour

1 tablespoon sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 egg

2 tablespoons of vegetable oil

1 cup of milk

3/4 teaspoon vanilla extract

1/3 cup 60% dark chocolate chips

*2-5 drops of food coloring for desired green

Serve with powdered sugar, strawberries, chocolate sauce or whatever else you like.

Directions:

Combine flour, sugar, baking powder and salt in a bowl, whisk until combined. In another bowl whisk the egg, milk, oil and vanilla, then pour into the flour mixture and mix well. Add the chocolate chips and stir.

Heat a non stick griddle that has been lightly sprayed with cooking spray then pour 1/4 cup of batter onto griddle. When bubbles form on the top turn over, cook until the other side is lightly browned, turn out onto plate and serve with desired toppings.

    Oh how sweet your day began! Love the green pancakes. A sneaky leprechaun dyed the milk green at school. It was all about wearing of the green today. Hugs!
