Schaum Torte with Raspberries the Perfect Mother’s Day Dessert

Good morning! How was your weekend? I hope that you were lucky enough to have some beautiful sunny weather! It was perfect here, sunny, cool breeze and around 70, you could not ask for anything more.

I had a relaxing but busy weekend. As I mentioned last week I am not spending Mother’s Day with my mom but I will see her a few days after and I want to have a few of her favorite desserts ready. This recipe for Schaum tortes is one that has been in my family forever, my grandmother’s grandmother made it. 

For those of you who are not familiar, schaum tortes are basically meringues or pavlovas. They are easy and delicious and make a beautiful dessert for mother’s day or any other celebration. 

Schaum Torte

Serves 12

6 egg whites

11/2 cups of sugar

1 tsp. cream of tartar

1 Tablespoon apple cider vinegar

1 tsp. vanilla extract

Strawberries, Raspberries or any other fruit you like

Heavy whipping cream, whipped and sweetened

mint for garnish

Directions:

Preheat oven to 275. Line baking sheets with parchment paper.

In a mixer fitted with whisk attachment, add egg whites and let sit for at least 30 minutes. Once they have rested beat until foamy, then add cream of tartar and apple cider vinegar. Beat on high until soft peaks are formed, the tips curl over. 

Add vanilla and sugar slowly, beat on high until stiff peaks form.

Pour into a pastry bag and pipe onto parchment paper, or just spoon them in circles onto paper and make a well in the middle. Depending on the size you can make between 12-20 tortes.

Bake for 50 minutes then turn off oven and let them rest in the oven another hour.

Serve with macerated fruit and whipped cream, garnish with mint.

Have you made this dessert before? Don’t you just love them? They are scrumptious and  you can make them ahead and serve them with a variety of berries and let your guests assemble them themselves.

    Looks delicious Elizabeth. I love pavlova and any kind of meringue.
    I must confess that after numerous attempts I have not mastered the art of baking meringue and each time I resort to purchasing the meringue from the baker and then I add my touches.

Good evening friends, I hope you had a great day! Good evening friends, I hope you had a great day! I’ve been experimenting with plants and branches from my yard to make an Easter arrangement. I wanted tulips but there was a man at the store that asked me to point out the tulips for him, he told me his wife sent him to but them all up. I think she probably specified a certain color and he missed that part of the instructions, either that or they were going for and arrangement of every color of the rainbow. In any case there was nothing left for me except one package of cabbage looking things so off I went to the yard to forage. I added a moss covered bunny and some eggs and I am ready.
