Morning Buns

Good morning! It is going to be another beautiful, hot and sunny day here. However I read yesterday that 7 states are bracing for a polar vortex and will be getting SNOW! Snow in September, a month earlier than normal. 

I don’t know about you but that scares me a little. if we are getting snow in September what the heck will winter be like.

I think a snow day in September would be cool, the opportunity to sit by the fire with a cup of cocoa and a good book or perhaps spending a little time in the kitchen with a new recipe?

Cinnamon Roll made by Pine Cones and Acorns

I love cinnamon rolls and am always trying to find the recipe that I remember from my childhood. My sister on the other hand loves Morning Buns, for those of you who do not know what they are it is basically a flaky, croissant like roll with buttery, cinnamon and sugar goodness in the inside.

I thought as I was enjoying a lazy weekend that I would attempt to make a few batches, let me be honest from the start, it takes 2 days and is a lot of work. The end result is totally worth it though! I loved these bun and will definitely make them over the holidays!

Morning Buns

Ingredients:

1 Recipe for Nigella Lawson Danish Pastry

6 tablespoons browned butter, cooled

1/3 cup sugar + more for dusting

1/3 cup light brown sugar

2 tsp. ground cinnamon

1/4 tsp. cardamon

1/8 tsp. nutmeg

pinch of cloves

pinch of salt

In a small bowl combine, sugars, spices and zest, set aside.

With a pastry brush, brush the inside and bottom wells of 12 cupcake tin. Sprinkle with sugar and coat the wells, dumb out excess sugar.

Roll pastry dough into a 8 x 20 inch rectangle, coat with browned butter, the sprinkle with spice mixture, press spices lightly into dough. Roll dough, like a jelly roll and cut into 12 even pieces. Places rolls into pan. Set aside to raise in a warm, draft free spot for about 45 minutes or until doubled in size. 

Preheat oven to 375, then bake buns until golden and fluffy, about 18-20 minutes.

Remove from oven, invert on wire rack. After 10 minutes roll in sugar. Enjoy!

 Danish Pastry Recipe

Recipe from Nigella Lawson

1/4 cup warm water

1/2 cup milk at room temp


1 large egg at room temp


2 1/4 cups white bread flour


1 package rapid rise yeast


1 teaspoon salt


1 tablespoon sugar


1 cup unsalted butter, cold, cut into slices



Beat egg, water and milk together, set aside. Put flour, yeast, salt and sugar into food processor and pulse to mix, add the cold slices of butter and process until the butter is cut up, empty into a bowl and add the milk mixture. Fold together, cover with plastic wrap and put in the refrigerator overnight or up to 4 days.

To turn into pastry, let dough come to room temp, and on a lightly floured surface roll into a rectangle. Then fold into thirds, like a business letter, turning it afterwards so that the closed fold is on your left. Roll out again to a rectangle and repeat the steps above 3 times.  The dough my be sticky and hard to work with(it was for me), if so put into refrigerator between turns. 

Wrap in plastic and return to refrigerator for 20 minutes until ready to use.

    I remember a bakery near where my parents lived for some years that made a lot of pastries like this.

    As to winter, I was already noticing fall colours in the last week of August, so it could be a very early winter.
