The Blush Lily, Pimento Cheese and the Weekend

Good morning! How was your weekend? Did you watch the Derby? As I said, we did not attend a party but stayed home to enjoy a little leisure time.

We did make a few Mint Juleps, Blush Lily’s and appetizers.

Recipe from Southern Living

6 tablespoons cranberry juice

3 tablespoons Vodka

2 tablespoons lime juice

slash of Triple Sec

crushed ice.

Fill cocktail shaker with all ingredients, shake well, strain cocktail into glass filled with ice. Add lime slice or mint for garnish.

One of the appetizers we made was pimento cheese dip. Every Southern family, I have been told since moving to the South, has a family recipe that is closely guarded. My husband and I are not born and raised in the South but we did make what we think is a tasty recipe for pimento cheese dip.

Pimento Cheese Dip

3 oz. softened cream cheese

1/2 cup of Dukes mayonnaise

1/2 tsp. Tabasco sauce

1/4 tsp. salt

1/4 tsp. Cayenne pepper

1/8 tsp. paprika

dash of Worcestershire sauce

pinch of red pepper flakes

1 4 oz. jar of whole roasted pimentos, dried, juice reserved, chopped

2 cups extra sharp white cheddar cheese grated

2 cups sharp cheddar cheese grated

In the bowl of an electric mixer with a paddle add cream cheese beat until creamy, add all other ingredients except the cheese and pimentos. Beat until creamy then fold in the cheese and the pimentos. Add a little of the reserved pimento juice to make it creamier if you like. Chill mixture and serve with crackers, or toasted French bread rounds.

    I don't watch the Derby although I enjoy hearing about it. It makes me crave a nice cold Mint Julep too. Or maybe I'll try your Blush Lily. I copied the recipe because I enjoy a great cranberry cocktail every once in awhile. I hope your May is starting off well Elizabeth. Can you believe it's already May?

    Pimento dip must be very Southern- to the best of my knowledge, I've never had it. I don't think my parents ever had pimentos in the house.

    I have been known to hoard Pimiento Cheese 😉 I have a recipe I like (although we can't get Duke's mayonnaise up here), but I don't make it often because I usually end up eating it all myself!!

    We are crazy about pimento cheese in this house. My mother-in-law's was the first I ever tasted (its origins were in Richmond) and I have tried a few variations on her recipe over the years. Our current favorite included finely chopped pickles. From what I have read it seems that Duke's is practically required for authenticity so I have already planned to drive home with a case after dropping my daughter at school in Virginia this August. The Blush Lily looks very refreshing – will be trying that this weekend if the heat sticks around. 😉
