Almond Cheesecake Bars are the perfect dessert for any occasion. Made with shortbread crust, and cheesecake filling these bars are delicious.
Traditional cheesecake is one of my favorite desserts because it is easy to make and is a delicious dessert for everyday and special occasions as well. This recipe for almond cheesecake bars is even easier and is the perfect treat to serve at a baby showers, bridal showers, bbq, pot lucks, book club or any other occasion that calls for a sweet treat.
Almond is one of my favorite flavors and I bake with it all of the time, if you like it too you will love my Buttery Almond Braid and Raspberry Almond Coffeecake.
Almond Cheesecake Bars
These bars are fabulous! I think they might be the best dessert I’ve made lately.The crust is basically a shortbread cookie, sweet, crunchy and buttery. And the filling is an easy, creamy, smooth, almond cheesecake. Add the frosting and the toasted almonds and you have a delicious dessert for any barbecue or party.
Ingredients for Almond Cheesecake Bars
Shortbread Crust
Cream Cheese Layer
- 8 oz. cream cheese, room temperature
- 1/2 cup sugar
- 2 large eggs
- 1 1/2 teaspoon almond extract
- 1/4 teaspoon vanilla extract
Frosting
- 11/2 cups powdered sugar
- 1/4 cup melted butter
- 11/2 teaspoon milk or heavy cream
- 1 teaspoon almond extract
- Toasted almonds for garnish
How to Make Almond Cheesecake Dessert Bars
Pre heat oven to 350. Line a 3 x9-inch pan with foil or parchment paper.
In a stand mixer with a paddle attachment, combine the flour, powdered sugar. You could also use a pastry blender to mix the ingredients.Then pat the dough into the bottom of the prepared pan. Bake the crust for 15-20 minutes, begin to check after 15 minutes so it doesn’t get to dark.The crust should be golden brown.
In a large bowl, with your electric mixer on medium speed, cream the cream cheese and the sugar together until smooth, about 1-2 minutes. Add the eggs and almond and vanilla extract and mix until combined. Make sure to scrape the bottom and sides of the bowl with a spatula so that all of the filling ingredients are combined.
Pour the cream cheese mixture over the hot crust and bake for 15-20 minutes. The filling should be set in the middle. Remove from oven and cool on a wire rack.
Mix all the frosting ingredients in a small bowl until smooth. The pour over the cooled almond bars and smooth with an offset spatula. Garnish with toasted almond slices.

How to store cheesecake bars
Wrap the cheesecake bars in plastic wrap or store in an airtight container. You can also freeze the bars if you like for up to 3 months.
