Classic Apple Crisp

Good morning! How was your weekend? Did Winter come to your area as it did to mine? I woke up on Sunday morning and thought I missed Fall it was so cold. In fact last night some areas around me had frost! It is too early for it to be this cold, don’t you think?

I did make the best of it though by whipping up a little apple crisp. It was delicious still warm from the oven and even better this morning for breakfast. I also spent a lot of time relaxing by the fire reading magazines. 

Apple crisp is a Fall staple in my house and because it is so easy to make I like to experiment with new recipes. This recipe is one that I discovered on from Pinterest from Taste Better From Scratch blog. Soft tart apples with a sweet crunchy topping, perfect for dessert or as I mentioned a sweet breakfast treat. 

Classic Apple Crisp

Recipe from Taste Better From Scratch

Topping:

1/2 cup of flour

1/2 cup old fashioned oats

1/2 cup of brown sugar

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/8 teaspoon nutmeg

pinch of salt

1/3 cup cold butter cut into small pieces

For the Apple Filling:

4 large Granny Smith apples, peeled, cored and sliced thin

3 Tablespoons melted butter

2 Tablespoons flour

2 Tablespoons lemon juice

3 Tablespoons milk

1/2 teaspoon vanilla extract

1/4 cup brown sugar

3/4 teaspoon cinnamon

Preheat oven to 375. Prepare an 8 x 8 inch baking dis with cooking spray and set aside. Or prepare small ramekins as I did. 

In a medium bowl combine all of the topping ingredients and mix with a pastry blender or your hands until the mixture resembles small crumbs. Set aside.

For the filling combine the flour and the melted butter until well blended, then add the lemon juice, milk and vanilla, stir well. Pour over apples and toss to coat. Pour apple mixture into pans and speed evenly. Sprinkle the topping evenly over the apple and bake for 30-35 minutes or until golden brown. Allow to sit for 10 minutes to cool.

    And here we are, having a prolonged summer! That is too weird…..it is so beautiful here however, the colors vibrant. But I had on my coat yesterday while out enjoying the day and I started to over heat! Enjoy the baking and cozying up of your home sweet Elizabeth!

    Hi Elizabeth! Minimal fall activity in Saigon but I did start packing for Tahilla Farm with autumn on my mind. I had mashed potatoes last night…a sign that the trip is getting close. Now I see a beautiful apple crisp…and I think you just put me over the edge. I spotted apples from New Zealand at the market yesterday…I feel an apple crisp coming on! Thank you!!     Hi Elizabeth!

    We hit the pumpkin patch with the grands on Saturday, and attended our friend's remembrance supper on Sunday. Sweet and sad, but mostly sweet! (He fought a hard battle.)

    I love fruit pies, cobblers and crisps for breakfast! ( I am pinning this to try soon.)
