Good morning! I hope that you had a great weekend, I know that I did. This is probably going to sound a little funny but I think I appreciate weekends more as I age. I really make it a point to do nothing, not all day, but for a few hours. Or I try to do things that I enjoy as opposed to fitting in a little work.
Often times I post desserts on my blog, but this week I thought I would post something savory, as I am trying to up my protein intake. I have made this, Crustless Caramelized Onion, Ham and Gruyere Quiche several times during that last month and I love it. In fact I like it so much sometimes I will eat it for breakfast and dinner. This quiche is crustless as I am not a fan of crust but obviously if you like crust you can make one.
Crustless Caramelized Onion, Ham, and Gruyere Cheese
Ingredients
3 sweet onions
2 tablespoons olive oil
1 cup chopped ham
2 cups Gruyere cheese
1 cup milk
1/2 cup heavy cream
4 large eggs
1/2 teaspoon dried thyme
1/4 teaspoon ground pepper
1/4 teaspoon ground nutmeg
Directions
In a skillet heat olive oil in a sauté pan over medium heat. Add onions and cook until onions are softened. Then lower heat to low-medium, and cook for an additional 20 minutes until the onions are browned but not burned.
Preheat oven to 350. Prepare a 9″ pie plate by spraying with cooking spray. Then add the caramelized onions, the chopped ham and the cheese.
In a separate bowl, lightly whip eggs then add the milk, heavy cream, salt, pepper and nutmeg and whisk together.
Pour the milk mixture over the ham, onion, and cheese. Then bake for 40-45 minutes or until mixture is set. Let cool for 10-15 minutes until serving.

Warm weather on Saturday, cold weather yesterday with a change of activity….we went to a memorial service for a friend that was bittersweet, but in the end, so uplifting. Thus is life. That looks delicious. Just the words "caramelized onions" makes my mouth water. I've had truffles on my mind, and this would be yummy with some slivers on top.
I would enjoy it, though it occurs to me that I've never tried Gruyere cheese.
OOOOH Elizabeth – this looks positively yummy. I love quiche and a salad is the perfect compliment to it. If you lived in Mass. I would be your best friend and 50 lbs heavier. Enjoy your week!
