Roasted Cinnamon Almonds

Good morning! I hope that you week is going well. Are you over the chocolate, the peeps, jelly beans and stuff from Easter? I usually eat a few things on Easter but after that I don’t want anymore.

 But I still like to have something sweet as a treat. I have a quick and easy recipe for you if you are tired of the Easter stuff too. I would like to say that these are good for you, but they aren’t really because of the sugar. The good news is they contain heart healthy almonds!

Roasted Cinnamon Almonds

2 egg whites

2 teaspoons vanilla extract

1 cup brown sugar

1 cup white granulated sugar

1/2 teaspoon salt

2 teaspoons cinnamon

Preheat oven to 250. Line baking sheet with parchment paper. 

In a bowl combine the sugars, salt and cinnamon, mix well. 

Beat egg whites and vanilla with mixer until soft peaks appear then add almonds and mix to coat. Add sugar mixture and mix well. Pour onto prepared baking sheet. Bake for 60-70 minutes until nuts are dried, stir every 15 minutes.

Have you made these before? I make them frequently and often give them away to friends for hostess gifts.

Self-care is more than a bubble bath(I love those) Self-care is more than a bubble bath(I love those) it’s also little rituals and small things you do for yourself every single day. For me, it’s a cup of steaming hot chocolate. I use real chocolate, not cocoa, a dash of cinnamon and a dash or two of cayenne, whisk until frothy the add a little foam and steamed almond milk.
