Good morning! How was your weekend? Mine was fabulous! I was able to get out on the water on my paddle board and soak up two hours of sun. The rest of the weekend it rained, but that did not stop me from enjoying a little barbecue, a lot of fun and a little work.
I made this incredibly easy and scrumptious Easy Italian Coffee Cake from An Italian in My Kitchen a couple of weeks ago and I think it would be a great dessert or breakfast cake for you to make while peaches are coming into season.
Italian Peach Coffee Cake
Recipe from An Italian in My Kitchen
Ingredients
Crumb Crust
21/2 cups flour
2 tsp baling powder
pinch of salt
1/3 cup + 1 tablespoon cold butter
1 egg
Peach Filling
21/2 cups peeled. sliced and quartered peaches
1/2 tablespoon sugar
Directions
Preheat oven to 350, then grease and flour an 8″ spring-form pan, line the bottom with parchment paper.
In a medium bowl, mix peaches together with the sugar, set aside.
In a large bowl whack together the flour, sugar, baking powder and salt, add butter and then with a pastry blender or two knives combine to form a crumbly mixture. Then add the egg and combine to mix, but only until still crumbly.
Add 2/3 of the mixture to the bottom of the spring-form pan, then spoon in peaches and add the crumbly mixture to the top.
Bake for 30-40 minutes or until golden brown on top. Let cool, enjoy!
