Good morning! How was your New Year’s eve? Did you have a good time? Ours was very low key and it was perfect. We were invited to a small party at the neighbors which I am happy we did not go too because it did not get over until 5:00 am. I did not even last until midnight. Did you?
I don’t know about you but I am happy to be back in my routine, I have no discipline when I am around holiday food. I ate way too much stuff that is not normally in my diet. Yesterday I whipped up a batch of this super easy pumpkin soup to eat and to get back into a healthy routine.
Pumpkin Soup with Chorizo
Recipe from The Domestic Man
Ingredients
1 tbsp olive oil
1 onion, diced
4 cloves garlic, minced
1 tsp dried marjoram
1 tsp dried oregano
1/2 tsp ground cumin
2 15oz. cans pumpkin puree
3 cups chicken broth
1/4 lb fresh ground chorizo sausage
salt and black pepper to taste
Directions
1. Heat olive oil in a soup pot, on medium heat for one minute. Add the onion and sauté until translucent, about 6 minutes. Then add the garlic and spices and sauté about 30 seconds.
2. Add the pumpkin puree and chicken broth, stirring to combine. Bring to a simmer, then cover and reduce heat to low. Simmer for 20 minutes.
3. In a separate pan over medium heat sauté the chorizo until cooked through, about 5 minutes, then set aside to use as garnish.
4. Blend the soup with an immersion blender until smooth, if mixture is too thick add a bit of water to thin it out.

I really must make a squash soup before the season is over, or at least make another batch of cream of mushroom soup with chestnuts! I have three more small packages of chestnuts that I really need to use!
