Fluffy Sour Cream Pancakes

Good morning.  Did you have a nice weekend? I did but it went too fast. Can you believe that it is almost March? I think the older I get the faster time seems to go. 

Tomorrow is Shrove Tuesday otherwise known as Mardi Gras or Pancake Day. Pancake day is always 47 days before Easter and traditionally about using up all fatty foods in your pantry, eggs, milk and sugar which were usually not eaten during Lent. 

I love pancakes and frankly I do not have them often enough. Typically I make buttermilk pancakes but this week I decided to try a new recipe for Sour Cream Pancakes.

These pancakes are light, fluffy and fabulous. I like to eat them with powdered sugar, and fruit but you can have syrup, butter or whatever you like. 

Sour Cream Pancakes

Recipe from Her Cup of Joy

1 cup of milk

1/2 cup of sour cream

1 egg lightly beaten

2 tablespoons melted butter

2 tablespoons sugar

1 teaspoon vanilla extract

11/2 cups of flour

2 teaspoons baking powder

1 teaspoon baking soda

1/4 teaspoon salt

Directions

Whisk together the milk, sour cream, egg, sugar, butter and vanilla. Then in a separate bowl combine the flour, baking soda, baking powder and salt. Add the dry ingredients to the wet and whisk until there are no large lumps. Then let rest for 15 minutes.

Heat a non-stick pan over medium-low heat, spray the pan with cooking spray or add a little butter. Add batter and cook for about 2 minutes on each side.

Serve with fruit, butter, syrup.

If you need something a little more decadent before Lent you could always make a batch of these Chocolate Pancakes.

    I never heard Mardi Gras referred to as Pancake Day before. Interesting! In France, crêpe day is Feb. 2, sort of on the same principle–time to use up the last of the winter's flour. It's called the Chandeleur, or Candlemas. If you successfully flip your crêpe in the air (according to some while also holding a coin in the other hand) you are supposed to be prosperous in the coming year.

    Hello, Francetaste! I love the French take on this!

    I have to admit, I am not a fan of pancakes…why? Because we were rather poor while I was growing up and we often had to eat them for dinner. I could not stand them! HAHAHAHHHAHAHAHA but there are so many varieties these days and the ones you show here dear Elizabeth are rather beautiful, and I'm sure tasty especially with chocolate! Have a super day my friend, and I can't believe Easter is already our next major celebration!

    We love pancakes at our house… even for supper occasionally. The Dutch Baby pancake is a favorite.

    i could easily break my diet for these! is your family happily guinea pigs elizabeth?
    you may know this already but i love to add fresh cranberries to maple syrup boiling oil the stove, when they pop & mingle with the syrup, delish!
