Good morning! How was your weekend? I hate to say that mine was great when so many were suffering. It seems as if the last month there has been nothing but hurricanes, fires and earthquakes. As I write this is it too soon to know the extent of the damage but I am praying that it is not bad.
When times are crazy I bake and eat comfort food. In addition to pizza and pasta one of my favorite comfort foods is sandwiches. This bacon, brie and avocado on cranberry walnut bread is my new favorite Fall sandwich. The sandwich is sweet, smokey, savory, crunchy, gooey and delicious. I love the fact that it is so easy and so good. You can change the bread to whatever you like and I like it just as much with camembert or cambozola cheese too.
Bacon Brie Avocado Sandwich
Recipe Adapted from Quinn Cooper Style
Ingredients
1/2 pound of bacon
3 tablespoons of brown sugar
Fresh ground pepper/salt
1 wedge of Brie cheese
1 avocado
Cranberry Walnut Bread or Multi-grain Crusty Bread
Directions
Preheat oven to 400F. Place tin foil on a baking sheet then add a baking rack. Place bacon on the rack and sprinkle with brown sugar, bake the bacon until crisp and glazed about 15-18 minutes. Cut the avocado in half, remove the pit. Slice each half of avocado into slices of the thickness that you like. Take two slices of bread for your sandwich and place a couple of slices of brie on the bottom, add several pieces of bacon and finally add as the avocado. Sprinkle with salt and pepper and enjoy. You can toast your bread of you like or you can leave it fresh.
