Good morning! I am so excited because I was invited by Mary Ann of the beautiful blog Classic Casual Home to join Sue of The View From the Great Island, Annie from Most Lovely Things and Cindy from Rough Luxe Lifestyle to share a summer salad with you today.
I made an incredibly easy Greek pasta salad that you can eat warm or cold at home or take along to a bbq, summer party or picnic.
Summer is a busy time and frankly many days it is simply too hot to cook. Rather than carry in or eat out why not fix yourself a refreshing salad? I love salad but to be honest I am a little lazy sometimes so I like to make salads that are as easy as possible and this Greek Pasta Salad fits the bill. You simply gather the ingredients that you like, chop, add to cooked pasta, toss together and enjoy!
Easy Greek Pasta Salad
16 oz. cheese tortellini pasta
1 cucumber chopped
1 pint grape tomatoes cut in half
1/2 cup pitted kalamata olives
3/4 cup quartered artichoke hearts
3/4 cup of mini mozzarella balls, you can replace with feta
1/3 cup red onion, diced
fresh herbs(basil, oregano) to taste
Optional: red/green peppers
Cook the pasta according to the directions on the package, once done drain and set aside.
Meanwhile prepare the vegetables, cut the grape tomatoes in half, dice the artichoke hearts, and the cucumbers, chop the onions, and place everything in a bowl. Mix lightly, then add desired amount of dressing and mix again. You can eat it warm or cold.
juice of 1 lemon
1/4 cup red wine vinegar
1/2 cup olive oil
1/2 minced garlic clove
1 teaspoon oregano
salt and pepper
Place all ingredients for the dressing in a jar and shake vigorously until combined.
Note: I realize that feta cheese is traditional in a Greek salad but the day I made this the guests wanted mozzarella.
This salad is delicious on its own as lunch or a light dinner but if you want something a little more than add a grilled chicken breast.
You can also add or subtract the ingredients that your family does or don’t like and make it more personal.
