Good morning. I cannot believe that this is the last week of October that means we have 60 days left until Christmas. On the one hand it is a little scary and on the other hand, “it is the most wonderful time of the year” so let the fun begin!

I love butternut squash but what a pain in the butt it is to peel, cut and roast. I try to buy it already cut at the store to save time but this past week they were out so I was forced to get zoodles. I have never had them before and they were perfect with browned butter and sage, we served them with pumpkin sausage which made them even better. I used this recipe from Boulder Locavore.

You are right, it is a little scary that it's only two months until Christmas but this is the most wonderful time of the year! I've even begun listening to Christmas music already.
