Good morning! Today is Shrove Tuesday(the day before Ash Wednesday which is the start of Lent) otherwise known as Pancake Day. Pancake day comes from the old custom of using up all of the fattening ingredients you had in your house, i.e. eggs and milk, before you started your fast for lent.
I love pancakes; sometimes I like them with lots of maple syrup, other times with butter and powdered sugar and sometimes I like them plain with fresh berries. If I am being totally honest, I rarely eat them with fruit because I love maple syrup.

Oh shoot – yesterday we started a week of almost no carbs so pancakes are definitely off the list! I usually make traditional England pancakes, thin as can be crepe style, rolled and served with just fresh lemon juice and sugar – heavenly and a reminder of my English childhood. Enjoy your choice though!
Elizabeth – I made the Cranberry cake and just as I thought might happen with no fresh berries, it turned into bowls of yummy pudding – Bob added ice cream, me mascarpone! (Hence dieting now required!). The frozen cranberries were gigantic (from Cape Cod) and perhaps I should have thawed them more. I baked it in a French loose bottom pan (which looked like yours) and after an extra 10 mins. because it wasn't done, I had to take it out before burning it. Looked lovely, but do you think it would come out of that pan (well greased BTW) like a cake, no way. Eventually after cooling I removed it, looked a mound of mess, and found it still wasn't completed cooked! But it was fine after heating individuals serving bowls a bit in the micro – actually delicious!!!!
