The one I am most excited about is Poilane from the world famous bakery in Paris. Although I enjoy the bread I love their puniton cookies.

I want them all! But your favorite Polaine sounds wonderful and I had forgotten about Maida Heatter but many years ago used to check out her books from the library and copy down recipes. I think it's time to actually own one of hers. One guess as to what I'm craving now!
And now I'm hungry. Fortunately it's lunch time.
