Good morning! How was your weekend? Did you relax or did you spend the weekend getting ready for the kids/grandkids to go back to school? Everywhere we went people were getting back packs, school supplies, last minute things for their dorm rooms and food for lunches.

I think everyones’ favorite part of their school lunch is the snack, am I wrong? I have the perfect healthy back to school treat, trail mix!
This really cannot even be called a recipe but I will share it with you anyway in case you want to make some for your house. It is a great snack to have on hand, I like to keep a bag of it in the car and it helps me from stopping at every donut store I see.

Healthy Trail Mix
11/2 cups raw almonds
11/2 cups Virginia Peanuts
1 cup of raw pumpkin seeds
1 cup of raw sunflower seeds
1 cup dried cranberries
1/ cup 60% dark chocolate chips
1/2 cup semisweet chocolate chips
1 cup of coconut
1/4 cup dried apricots
You can also add dried apricots, golden raisins, banana chips, pop corn or any other nuts, seeds and fruit that you like.
Mix all of the ingredients in a bowl and enjoy!
That is it, the easiest “recipe” ever. The great thing about making your own mix is that you can control the amount of salt(use unsalted nuts), sugar(use less dried fruits) and chocolate. As with all snacks moderation is always key.
