Hearty and filling easy chicken soup, a delicious meal on a cool day.
As you know I like to bake, cooking to me is not as fun. I do make some interesting and complicated savory meals but I prefer easy, tasty ones so that I can save my energy for treats. This week I made some scrumptious chicken soup, using a recipe from Feel Good Foodie, my favorite part of the recipe is that you make the stock using all of the scraps from chopping the vegetables, it is a great way to flavor the stock and something I have not done before.
Easy Chicken Soup
Adapted from Feel Good Foodie
Ingredients
1 pound chicken breasts
1 onion diced
3 carrots diced
3 stalks celery
salt and pepper
1 tablespoon olive oil
2 garlic gloves
1/2 tsp. thyme
rice noodles or rice
Directions
Add the ends of the onions and skins, celery leaves and pieces, carrot peels, garlic skins in the pot with the chicken, bay leaves, salt and pepper, pour in 8 cups of water. Bring to a boil, then turn down the heat and let simmer until chicken is tender, about 30 minutes.
Once chicken is tender and cooked through remove the chicken and place in a bowl. Drain the stock in a colander to remove the vegetable scraps and save.
Shred chicken, set aside. I like to shred my chicken in my Kitchen Aid mixer using the whisk attachment, it is so easy and takes about 2-3 minutes.
Heat the olive oil in the pot then add the carrots, celery, garlic and thyme, cook until soft. Return the chicken to the pot, add the chicken stock that you made. Bring to a boil, then simmer for 30 minutes. If you want to add rice add it here.
I made rice noodles and added them into the soup after it was cooked.
That is it, easy and delicious.
