Good morning friends, I thought I would share one of my favorite, easy treats to make today, bourbon roasted cherries.
They are perfect for ice cream, on pound cake, over yogurt, as a filling inside a cake, on oatmeal, chia pudding, even on a turkey sandwich in place of cranberries, you could also serve them on a charcuterie tray. The possibilities are endless. In fact, with the holidays coming up they would be a great food gift for family and friends.
Before we go any further I should say that you can make these with the cherries pitted or un-pitted. I personally do not like to pit the cherries, I think too much of the natural juices are lost but you do whatever you feel comfortable with. Also, you do not need to use bourbon to make these cherries, they taste just as good without the alcohol.
Bourbon Roasted Cherries
12 oz fresh cherries, no stems
2 tablespoons brown sugar
1/4 cup of water or bourbon
1 tsp. vanilla extract
Preheat oven to 400. Stir the sugar, the water/bourbon and the cherries in a small roasting pan. Bake for 20 minutes, stirring occasionally. Once cherries have released their juices remove from oven and stir in the vanilla extract, let cool. Remove from pan and store in a jar in the refrigerator. The cherries will last for 2 weeks if refrigerated.
