Good morning friends! How are you? I hope that you are soaking up the sunny summer days and enjoying the bounty from your garden. We are still reaping the benefits of our neighbors’ garden so this week I made marinated tomatoes and they are easy and delicious.
Marinated Cherry Tomatoes
1/2 lbs. of cherry tomatoes
1/4 red onion, thinly sliced
1 clove garlic, smashed with salt to form a paste
1/4 cup extra virgin olive oil
1 Tablespoon red wine vinegar
1 lemon, juiced
pepper and salt to taste
garnish fresh basil
Take your tomatoes and depending upon the size cut them in half, quarter them or if they are small leave them whole. Thinly slice the onion into thin strips. Smash the garlic on your cutting board and mix with a pinch of salt, then smush it on the board to make a paste. Add the tomatoes, onion, and garlic to a bowl and mix together.
In a separate bowl, mix the oil, vinegar, and lemon juice pour over the tomatoes and mix gently. Season with salt and pepper and garnish with fresh basil. Let sit for an hour or two and then serve.
These tomatoes are delicious on their own, added to a salad, or served with a steak, mixed in with a vegetable dip or even used on a pizza.
