Easy Chia Pudding With Roasted Cherries and Chocolate Sprinkles

Roasted Cherry Chia Pudding with Chocolate Sprinkles

Good morning friends.I don’t know about you but since October my regular meal plan has been usurped by cookies, candy, cocktails and decadent food that I only eat during the holidays. Everything was delicious and I enjoyed it tremendously, as one should during the holiday celebrations. But now I am ready to get back to my regular eating program. Today I am joining 4 friends to share healthy recipes to get us all back on track. I have super easy healthy pudding that I think you will love, Roasted Cherry Chia Pudding Sprinkled with Chocolate. You can eat it for breakfast, lunch, a snack or dessert.

Chia Pudding

This chia pudding is gluten free, vegan, has fiber, protein , iron, antioxidants and is not only good for you but delicious and versatile. Typically I make a batch plain and then we add whatever topping we like.

What You Need to Make Roasted Cherry Chia Pudding with Chocolate Sprinkles

Cherry chia seed pudding is made with simple ingredients and is delicious. It makes a healthy snack, dessert or even a healthy breakfast.

Roasted Cherries

  • 1 pint fresh cherries or frozen cherries, pitted
  • 2 tablespoons of sugar
  • 1/4 cup of water

Preheat oven to 450. In a small bowl mix the cherries and the sugar, pour onto a pan then drizzle with the water.

Bake for 10-15 minutes.

I watch them and like to take them out when there is still a lot of liquid but the cherries are soft. If you like the cherries more caramelized than bake them longer, closer to 15 minutes.

Note: If using frozen cherries defrost them and pour off the liquid before roasting otherwise you will have a soupy mess.

Chia Pudding

In a small bowl add milk, the chia seeds, vanilla extract, and the honey, maple syrup or other sweetener, stir well making sure all of the seeds are mixed in. Let sit for 5 minutes then whisk again to be sure that there are no pockets of chia seeds or any that have sunk to the bottom.

Pour into 4 individual glasses or jars. Cover with plastic wrap.

Place the chia pudding in the refrigerator overnight.

Remove from refrigerator top the chia seed mixture with cooled roasted cherry compote and a sprinkle of chopped chocolate.

Variations

  • Make roasted blueberries to top your blueberry chia pudding or add fresh fruit
  • Add almond extract to the chia pudding instead of vanilla extract.
  • Use fresh cherries, frozen cherries, tart cherries or sweet cherries, it’s up to your palette and what is available or in season.
  • Add protein powder or collagen to the chia pudding to increase your protein intake.
  • Garnish with chopped chocolate, granola, chopped nuts, or flax seeds.
  • If you like chocolate cherry chia pudding stir in 1/4 cup unsweetened cocoa powder along with the seeds, milk, sweetener and extract.

How do you store chia pudding with roasted cherries?

Store pudding in the refrigerator for 2-3 days.

Ingredients

Roasted Cherries

2 cups of almond milk, oat milk or any other non-dairy milk

12 Tablespoons of honey or maple syrup( depending on your taste)

1/4 teaspoon vanilla extract

Garnish with dark chocolate sprinkles or mini chocolate chips

  1. Looks and sounds delish! I think you probably made the right decision, during this Covid thing, to stay put for awhile. You're safer that way I believe. Just think of all that would be involved with movers and such during this pandemic.
