Pumpkin Spice Granola With Cranberries and Nuts

Good morning and happy December! Holy cow, where did the time go? A few weeks ago I was counting the days util Fall and all things pumpkin and just like that the calendar page has turned and we are on to all things gingerbread. Before I start posting non-stop sweet treats, 100 ways to make hot chocolate and other Christmas fare I thought I would share this pumpkin spice granola that I made a few days ago, it is easy and delicious and a great snack or breakfast treat. It is also delicious on yogurt.  

Pumpkin Spice Granola

Pumpkin Spice Granola with Cranberries 

Ingredients 

1  cup olive oil

1 pumpkin puree

1 cup real maple syrup

1 tsp vanilla

5 cups old fashioned oats

1 cup quinoa flakes

1 cup coconut

2 teaspoons of pumpkin pie spice

pinch of sea salt

1 cup raw pumpkin seeds

1/2  raw sunflower seeds

1/2 cup chopped pecans

1 cup dried cranberries

Directions

Preheat oven to 350. In a medium bowl combine the oil, pumpkin, maple syrup and vanilla, whisk until smooth. 

In a large bowl mix together the oats and the quinoa flakes, and flaked coconut. Pour the wet ingredients over the dry and mix well. Pour onto a baking sheet and spread evenly, bake for 15 minutes, then add the pumpkin seeds, pecans, sunflower seeds  and cranberries, mix well and bake another 15 minutes. It will feel a little wet when you take it out of the oven  and will crisp up as it cools. Resist the urge to continue baking it because it will burn. 

Let cool, store in an airtight container for up to two weeks. You can eat it as is or you can add the milk of your choice. Enjoy!

By the way today is Giving Tuesday, it was created in 2012 as ” a simple idea: a day that encourages people to do good.” This year when so many are out of work and suffering Giving Tuesday is more important than ever and it is not about just giving money, or giving your time it is as simple as giving a smile. We all have something to give no matter how big or small the gesture.
