Friday Favorites

Good morning friends! How was your week? I am always a little off schedule when we have a short week because of a holiday, aside from that everything was great. The unseasonably cool weather and a little rain has been welcome. Yesterday, just in case you missed it I joined 7 fabulous ladies to share “all things picnic“, including homemade sandwiches, desserts, picnics in the park, on the water, homemade picnics and store bought picnics. Make sure you check out all of the beautiful posts if you want to add a few ideas to your summer bucket list.

Food

On hot summer days I like to skip dinner and have snacks, like a charcuterie board, nuts, a small salad and maybe even some dip with vegetables. This whipped feta is one of my favorites to make.

If you want to make something a little heartier try this easy Shrimp Scampi recipe, several friends have made it and they loved it.

For those of you who are looking for something easy, healthy and delicious this Roasted Vegetable Chickpea Salad is perfect. You could also grill a bunch of vegetables the next time that you bbq and then you will have some on hand to make this for a meal or two later in the week.

Speaking of bbq, these Spicy Beer BBQ Chicken Skewers with Avocado Corn and Feta Salsa from Tieghan at Half Baked Harvest would be a great addition to your next summer gathering.

I love “no bake” desserts in the summer when it is too hot to turn on the oven and this mouthwatering No Bake Oreo Cheesecake is at the top of my list to try for my next dinner with Lawrence.

I haven’t done any shopping this week as I am trying very hard not to make any purchases before I move. Have you found any beautiful dresses or summer clothes that I might need to know about? Or anything else for that matter that I can “window shop?”
