Good morning friends, how was your weekend? Ours was busy with house stuff but we did relax on Sunday and enjoy the beautiful weather. Unfortunately, my mother in law, who is 93, fell, thankfully she was able to crawl to the phone and call for help. The good news is that she has no broken bones but she does have pneumonia so they are keeping her in the hospital for a few days. My sister-in-law lives less than an hour away and she has been able to be with her as well as keep us abreast of the situation. It is hard to be so far away when something happens to your loved ones.
The beaches are packed with families frolicking in the waves, kids building sand castles, and a rainbow of colorful umbrellas to shield them from the sun and the wind dot the landscape as far as the eye can see. On Saturday morning cars with license plates from all over the country, laden down with bikes, coolers, floats, etc stream into and out of the city to get to their rental houses. As for me, I’ve yet to jump in the waves but I do love to walk along the shore and hear the sound of the waves and to feel the sand between my toes. I will miss that when I move but I guess I will enjoy it all the more when I visit.
Is it just me or does anyone else feel like we all deserve a nice long summer vacation, time to recharge and enjoy nature after this past year? Have you made any travel plans yet or have you been on any trips? We have not made any plans yet, but once the move is behind us and we are settled in we are thinking of taking a few trips to see family.
I tried some new recipes this week, roasted summer vegetables with pesto and white bean salad, no-churn peanut butter cup and chocolate cookie ice cream, summer berry salad, a golden healing soup and an easy no bake cheesecake. I will share the recipes with you soon.
