No Bake Cheesecake in a Jar with Summer Berries

Good morning friends! I hope that you are having a fabulous week. It has been beautiful here and surprisingly cool for the last few days. As you know I am living in an extended stay hotel for a few weeks but I have not let that impede my cooking or creating. I have been cooking almost every night using either my Phillips Air Fryer or using the two burner electric cooktop to make simple skillet meals, salads and lots of chicken dishes. I have never used an electric cooktop so that has take some getting used too.

The hotel has limited supplies in each kitchen so with the help of a few of my favorite stores and Amazon I can still be creative and have some sweet treats in addition to our savory meals.

Sunday I made this incredibly easy No-bake cheesecake in a jar topped with my favorite summer berries. This delicious dessert is perfect for any summer occasion, bbq’s, days at the lake, a back yard picnic and more.

All you need is:

  • a cookie or graham cracker crust
  • cream cheese
  • heavy whipping cream
  • vanilla
  • sugar
  • berries or pie filling

These simple ingredients will make a tasty treat the whole family will love.

No Bake Cheesecake

Makes 6 8oz. cheesecakes

Ingredients

11/2 cups of cookie or graham cracker crumbs

6 tablespoons melted butter

8 ounces softened cream cheese

1 cup of heavy whipping cream

squeeze of lemon

1/4 cup sugar

11/2 teaspoons vanilla extract

Directions

In a small bowl mix together the cookie or graham crumbs and the butter, mix until combined then spoon into your jars or glasses and gently press down to form the crust.

In a medium bowl combine the cream cheese, vanilla, squeeze of lemon juice and the sugar, mix with your electric mixer until smooth and creamy, set aside.

In another bowl mix the heavy whipping cream until stiff peaks form. Fold the whipping cream into the cream cheese mixture then evenly distribute it between your jars. Top with your favorite berries or pie filling and let chill for several hours. Serve and enjoy.

That’s it, can you believe how easy it is to make dessert. If I can make it in a hotel you can make it at home!
