Good morning! A happy day to you! What are your plans on this fine Labor Day? The last day before back to school and on to Fall, and then the holidays. Time flies doesn’t it?
As we will soon be seeing winter desserts with lots of pumpkin, cranberries and spices I thought I would make a few last treats with summer berries. This cheesecake is very similar to this one which I made a few weeks ago, but there are a few changes. Two things that did not change, the taste which in my opinion is spectacular, and the ease of the recipe.
Blackberry Cheesecake Bars
Recipe adapted from: Tyler Florence
Ingredients
21/2 cup of graham cracker crumbs
1/4 cup of brown sugar
7 tablespoons butter, melted
Blackberry Puree
6 oz: fresh blackberries
1/4 cup granulated sugar
1/4 cup water
Cheesecake
16 oz. cream cheese, room temperature
1/2 cup sour cream, room temperature
1/2 cup, granulated sugar
2 eggs room temperature
juice from half of fresh lemon
Directions
Preheat oven to 350. Butter a 9×9 pan, then line with parchment paper and butter the parchment paper, set aside. Mix graham crackers, butter and brown sugar in a bowl. Pour into pan and press firmly. Bale for 10 minutes and then remove from oven and let cool.
In a small saucepan over medium-low heat, mix berries, sugar and water cook for about 8 minutes until the berries are broken down. Set aside to cool.
For the cheesecake
In the bowl of a mixer with a paddle, cream together the sugar and cream cheese until light and fluffy, add the sour cream and eggs then mix in the juice of the lemon.
Pour the cream cheese mixture over the crust, then sprinkle with the berry mixture. Swirl with a knife to make a little pattern. Bake for 35 minutes or until middle is slightly jiggly.

I am so glad that berries of any sort are good for our health, because I cannot eat enough of them!!!!!! And wow, this dessert is killer diller beautiful, but FORTUNATELY for my hips and heart, I cannot eat cream cheese! How are ya my friend?

Oh I haven't made a cheesecake in awhile. This may be the perfect dessert to serve my book group this week. It is certainly pretty.

That looks delicious and you made it look so pretty on top with the swirls! I've read that blackberries are even better for you healthwise than are blueberries, and that's saying a great deal!
