Happy St.Patrick’s Day

Top o’ the mornin’ to ya friends! I thought I would pop in this morning and say “Happy St.Patrick’s Day! Do you have any plans to celebrate the day? In Ireland St.Patrick’s day is a holy day, here in the USA it is an opportunity to attend a parade, drink Guinness and enjoy a corned beef sandwich.

"May the best day of your past be the worst day of your future."

I won’t be drinking any Guinness beer  but I will be having Baileys Irish cream in my dessert.

If you are looking for a last minute sweet treat to make for your celebration here are some of my favorites.

St.Patrick’s Day Desserts

Baileys caramel brownie terrine

I made this Bailey’s Chocolate Caramel Brownie Terrine for dessert tonight, it is one of my all time favorite desserts. It is basically brownie bread pudding and it is over the top scrumptious!

Guinness Stout Brownies are easy and delicious.

Baileys Irish cream cupcakes with buttercream frosting

Bailey’s Irish Cream Cupcakes can be made using a box cake mix if you are pressed for time, all you have to do is decorate with a batch of homemade baileys buttercream icing.

No Churn Chocolate Bourbon Brownie Fudge Swirl Ice Cream

No Churn Chocolate Bourbon Brownie Fudge Swirl Ice Cream

Ingredients
2 cups heavy whipping cream
1 14oz. can sweetened condensed milk
1/2 cup dark cocoa powder
5 Tbsp. Bourbon whisky
1/3 cup chopped brownies
1/2 cup chocolate fudge sauce, homemade or store bought
In the bowl of a stand mixer fitted with a whisk attachment whip the heavy cream until stiff peaks form.
Then add the sweetened condensed milk and the cocoa and whip until the mixture is light and fluffy and holds stiff peaks. Gently fold in the brownies and the bourbon.
Line a loaf pan with parchment paper and pour the mixture into the pan, smooth the top and then pour the fudge over the top and swirl. You can add more fudge and brownie pieces at this time as well.
Place the ice cream into the freezer for 6-8 hours but preferably over night.

Bailey’s Irish cream hot chocolate is perfect on a cold March night. This easy drink is as simple as making your favorite hot chocolate recipe and addicting an ounce or two of Bailey’s.
