Strawberry and Fresh Herb Salad with Blueberries and Feta is the perfect spring and summer salad recipe to make for a weeknight meal or a bbq.

Strawberry and Fresh Herb Salad with Blueberries and Feta

Strawberry and Fresh Herb Salad with Blueberries and Feta is the perfect summer salad recipe. Fresh strawberries and blueberries are tossed with herbs, greens and feta then drizzled with vinaigrette dressing and sprinkled with pecans. This salad is perfect for a light lunch, or for dinner with added protein, sliced chicken breast or fish.

I love to make this sweet berry salad for barbecues too, it is a delicious side for hamburgers, steaks and bbq chicken. It was a refreshing dinner last night after a long weekend of burgers on the grill, chips, cocktails and treats.

Herb Salad with Berries and Feta

A few weeks ago I planted containers of my favorite herbs, including mint, basil, oregano, cilantro, sage, rosemary, and parsley. Unlike my flowers which are fighting a loosing battle with the deer they are doing great. In fact they are doing so well I am running out of recipes to use them in and that is where this salad came from.

Fresh herbs mixed with salad greens are a delicious base for any salad, and this salad is one of my favorites.

Every corner here has a farm stand with fresh strawberries and peaches and soon there will be blueberries as well. For now I have been buying the blueberries for this salad at my local grocery store. If they are in season in your area use fresh, they always taste better. Here is a list of ingredient in this salad:

  • spring greens, spinach, or romaine lettuce(whichever you prefer)
  • fresh herbs(basil, oregano, parsley)
  • strawberries
  • blueberries
  • feta cheese
  • pecans

Strawberry Blueberry Salad with Feta Cheese and Pecans

Ingredients

6 cups spring greens

1/2 cup fresh herbs, I used a mix of basil, oregano, a little mint and parsley

1 cup of strawberries sliced

1/2 cup of fresh blueberries

1/3 cup crumbled feta cheese

1/3 cup pecans

Directions

Wash the herbs and greens, spin them dry in the salad spinner. Chop or tear the green and the herbs. Then add to a bowl along with the washed and sliced strawberries and the washed blueberries. Toss and add the salad to a platter or to individual bowls. Sprinkle with the feta cheese and nuts. Drizzle with your favorite vinaigrette and enjoy.

Tips:

This salad is very versatile in that you can use whatever greens you like, don’t have spring greens, use spinach or romaine.

If you are not growing herbs skip them, if you have lots of fresh herbs and you like the flavor add more to the salad.

I used feta cheese for this recipe but I also use blue and gorgonzola

Toasted pecans are good but candied pecans are better(in my opinion)
