Good Monday morning to you. Did you have a nice weekend? Mine was relaxing. The weather was so strange, I woke up Saturday and it was so dark and black outside the street lights were on. It was like that most of the day with heavy rain and high winds. Around 2:00 the sun poked its head out and then it rained again, then the sun came out and then it rained, again. Finally, it stopped raining and was hot and steamy. Sunday, more of the same. Needless to say I was able to do lots of laundry, cleaning and reading.
I did make this scrumptious salad filled with some of my favorite summer flavors, juicy peaches, crisp greens and tangy blue cheese and sweet honey. Add a little vinaigrette and you have a perfect salad. If you would like you can add a little chicken for protein.
Summer Peach Salad
Serves 4
8-10 cups spring mix salad or arugula
2 peaches sliced
1/4 cup red onion thinly sliced
2 ounces blue cheese crumbled
1/3 cup toasted pecans roughly chopped
Place salad mix onto plate or into a salad bowl, the add the peach slices, onions, pecans and the blue cheese crumbles. Add vinaigrette and enjoy!
Basic Vinaigrette.
3/4 to 1 cup olive oil, extra-virgin olive oil, or any good-tasting oil
1/4 cup good-tasting vinegar or lemon juice
1/2 teaspoon honey
1/2 teaspoon salt
1/8 to 1/4 teaspoon black pepper
Place all ingredients into a jar or a small bowl. If using a jar, simply shake the ingredients until combined. If using a whisk, simply whisk rapidly until mixture comes together.
