Homemade Brownie Ice Cream Sandwiches
Today is the first day of summer! It is also the longest day of the year. What better time is there to share a perennial summer favorite, ice cream sandwiches? These Homemade Brownie Ice Cream Sandwiches with Fresh Raspberries are so much better than store bought and will quickly become a weekly treat.
As a child whenever we would walk to the store for treats or when the ice cream truck came around I always got an ice cream sandwich. I haven’t had one in years, so I thought I would make some with some leftover homemade vanilla bean ice cream that I had in the freezer. They turned out perfect.

How to Make Brownie Ice Cream Sandwiches
1.Make a pan of brownies, homemade or store bought
2. Make no-churn, homemade or purchase vanilla ice cream
3. Sandwich the brownies and ice cream together, cut, serve and enjoy.
Ingredients (recipe below)
Unsweetened cocoa
dark chocolate, chopped
unsalted butter
granulated sugar
brown sugar
eggs
heavy whipping cream
sweetened condensed milk

Can I Use Any Kind of Ice Cream in My Brownie Sandwich?
Yes! The flavor combinations are endless and are totally up to you. Here are a few suggestions.

Cookies and Cream

Tips
Make the brownie thin, don’t do what I did, unless you like a thicker brownie. When the brownies are thinner they are so much easier to cut.
Be sure not to over bake the brownies, it makes them hard. Undercook them a little. Start to check them at 20 minutes if using 2 pans.
Line the pans with parchment paper, it helps to lift out the brownies.
Once you have mastered brownie ice cream sandwiches you can move on to these other scrumptious sandwich treats.

Homemade Brownie Ice Cream Sandwiches with Fresh Raspberries
Make the perfect summer treat by combing fudge brownies, ice cream and raspberries. These brownie ice cream sandwiches are creamy, fudgy and delicious.

Ingredients
Prepare 1 pan of brownies, I use this recipe. You can also use a box mix.
Ingredients for Ice Cream
1 can sweetened condensed milk
2 cups heavy whipping cream
2 teaspoons vanilla extract
1/2–3/4 cup of raspberries
Instructions
Prepare 2 8″ pans or 1 13 x 9 pan of brownies. Let them cool overnight. Then place in the freezer for 30 minutes to firm them up.
For the ice cream
Whip the heavy cream until stiff peaks form, then pour in the sweetened condensed milk. Mix until combined, add the extract, then mix again.
Pour into a loaf pan and freeze 8 hours or overnight.
To assemble the brownie ice cream sandwiches
Remove the ice cream from the freezer and let it sit for 5-10 minutes to get a little soft, then mix in the berries.
If you are using the 8 x 8 inch pans leave the brownies in one pan and then spread a layer of the softened vanilla raspberry ice cream mixture over them. Then add the other layer of brownie on top. Press down a little. Return the brownies to the freezer and let the brownies and ice cream set.
When you are ready to eat remove pan from freezer and cut into rectangle sized bars.
If you are using a 9 x 13″ pan, remove the cooled brownies from the pan, cut the brownies in half and fill one piece with ice cream and then place the other 1/2 of the brownie piece on top. Wrap in foil and return to freezer until ready to eat. Cut into sandwiches when ready to serve. Wrap in waxed paper.
One last way to make these ice cream sandwiches, bake the brownies, let them cool. Cut into rectangles or squares, add a dollop of ice cream, then add another brownie to the top to create a sandwich.
Notes
You can either make 1 9 x 13″ pan or divide the recipe between 2 8×8″ pans. If you are using 2 pans adjust the baking time. I would start checking the brownies after 20 minutes.
Make sure the line the pan(s) with parchment paper to make it easier to take the brownies out of the pan.
Make sure to underbake the brownies a little to make them easier to cut and enjoy later.
When the brownies are baked, let them cool overnight.
