Good morning friends! How are you? I hope that you are soaking up the sunny summer days and enjoying the bounty from your garden. We are still reaping the benefits of our neighbors’ garden so this week I made marinated tomatoes and they are easy and delicious.
How to Make Marinated Cherry Tomatoes
- Wash and dry your cherry tomatoes
- cut tomatoes in 1/2 or in 1/4 depending upon their size
- Thinly slice the onion
- Smash the garlic with a little salt and make a paste
- Mix tomatoes, onions, garlic past in a bowl
- Mix vinegar, lemon juice, salt and pepper together
- Pour vinegar mixture over the tomatoes, let sit for 1-2 hours to marinate
- Serve and enjoy
Serving Suggestions for Marinated Tomatoes
There are infinite ways to use a batch of marinated tomatoes. Here are some serving suggestions.
- As a side dish
- On a cheese, butter or charcuterie board
- As relish on a sandwich
- On top of homemade pizza or flatbread
- Piled on toasted bread for the best bruschetta
- To top your salad greens
- A topping for avocado toast

Marinated cherry tomatoes with fresh garden herbs, easy to make and a delicious addition to salads, pizzas and charcuterie boards
- Total Time: 10 minutes
- Yield: 4 servings 1x
Ingredients
1/2 lbs. of cherry tomatoes
1/4 red onion, thinly sliced
1 clove garlic, smashed with salt to form a paste
1/4 cup extra virgin olive oil
1 Tablespoon red wine vinegar
1 lemon, juiced
pepper and salt to taste
garnish fresh basil

Directions
Take your tomatoes and depending upon the size cut them in half, quarter them or if they are small leave them whole. Then thinly slice the onion into strips. Smash the garlic on your cutting board and mix with a pinch of salt, then smush it on the board to make a paste.
Add the tomatoes, onion, and garlic to a bowl and mix together.
In a separate bowl, mix the oil, vinegar, and lemon juice pour over the tomatoes and mix gently. Season with salt and pepper and garnish with fresh basil. Let sit for an hour or two and then serve.
