Homemade Chocolate Easter Rocky Road Candy Bar Recipe, an easy, delicious fudgy treat filled with crunchy cookies, nuts and sweet marshmallows.
I am sure that you have had rocky road ice cream, but have you ever had rocky road chocolate bars? Not the ones from the store but the homemade candy with mini marshmallows, broken cookies, nuts and whatever else you feel like mixing in. These chocolate fudge bars are the easiest treats to make and can be made all year long including the holiday season. Today I am sharing Easter Rocky Road Bars, you are definitely going to want to add this no bake treat to your Easter dessert table.They are also the perfect way to use leftover chocolate, chocolate Easter eggs, mini eggs and whatever other types of chocolate that you have.
Rocky Road candy could not be easier, you simply melt chocolate, mix in some biscuits, marshmallows and peanut M&M’s and voila a delectable chocolate treat. There are a ton of rocky road recipes this is my go-to recipe, your maybe different. You can see the full recipe on the recipe card.
How to Make Easter Rocky Road Bars
The good news is that this homemade rocky road candy needs no special equipment and does not requite a candy thermometer. All you need to make this easy recipe is simple ingredients that you probably already have in your pantry, quality chocolate, fluffy marshmallows, biscuits and M & M peanut candy.
Ingredients
- 2 cup good quality chocolate chopped, or leftover easter chocolates
- 3 tablespoons of unsalted butter
- 1 cup of large marshmallows cut into pieces or mini marshmallows or marshmallow eggs
- 1 cup of biscuits(cookies) chopped or broken into pieces
- 1 teaspoon vanilla extract
- 1 cup of M&M peanut, roughly chopped
Directions
- Line an 8 x 8″ baking pan with parchment paper, spray with cooking spray, set aside. Place the butter and the chocolate in a heat proof glass bowl and set over a pan of simmering water, melt until smooth. You can also melt the chocolate in a double boiler if you prefer.
- Break the biscuits into small pieces, use a rolling pin or your hands and place in a large bowl, Add the marshmallows and 3/4’s of the M&M’s to a bowl, mix well with a wooden spoon. When chocolate is melted pour the melted chocolate mixture over the cookie mixture and mix well. Pour into prepared tin and smooth the top, sprinkle with remaining M&M’s on top of the rocky road. Place into the refrigerator for at least 1 hour, then cut and enjoy.
How to Store Rocky Road Bars
Store rocky road candy bars in an airtight container in the refrigerator. Separate the layers with wax paper.
Additional add ins or substitutions
Easter rocky road bars are customizable to your personal preference, if you like milk chocolate use that, if you prefer dark that is good too, don’t like nuts, skip them, and if you do not have Easter candy or leftovers add whatever you have!
- An assortment of different nuts, including cashew nuts, crunchy peanuts.
- Cadbury eggs, mini creme eggs, mini eggs, mini chocolate eggs or other chocolate easter treats or easter candy
- Homemade marshmallows(my recipe), miniature marshmallows, marshmallow eggs
- White chocolate, milk chocolate, dark chocolate chips, semi-sweet chocolate chips, chocolate orange eggs or a mixture of chocolate. Leftover easter chocolate is fine too,
- Peanut butter
- Dried fruit, cranberries, apricots, raisons.
- Sea salt to sprinkle over the top.
- Digestive biscuits, Oreos, or any other cookie you like.
FAQ
Did Rocky Road originate in Australia?
According to Days of the Year, the Rocky Road dessert was created in 1853 in Australia. Confectionary items that had spoiled on their journey from Europe to Australia were mixed with nuts and chocolate and made into bars and sold instead of throwing them out as a way for business men to recoup some of their losses.
Seventy years later, the name appeared again on ice cream! In 1929, William Dreyer added cut up marshmallows and walnuts, to his chocolate ice cream and named it Rocky Road.
