Celery Cauliflower and Apple Salad with Blue Cheese and Cashews.

This simple and healthy celery, apple and cauliflower salad is easy to make, crunchy and delicious all year long.

1 small head of cauliflower, thinly sliced

3 Granny Smith apples, thinly sliced

5 stalks of celery, sliced on a diagonal

1/4 cup of toasted cashews

1/8 cup of crumbled blue cheese

For Vinaigrette

1/4 cup apple cider vinegar

1 teaspoon honey or maple syrup

1/2 teaspoon Dijon mustard

1/2 teaspoon sea salt

freshly ground pepper to taste

1/4 cup extra virgin olive oil


In a large bowl combine thin slices of apple,  cauliflower florets and sliced celery. Mix gently. Then add the toasted nuts and a sprinkle of blue cheese.

In a small bowl mix the apple cider vinegar, maple syrup or honey, dijon mustard, salt,  and fresh ground black pepper. Drizzle in the olive oil and whisk until combined. Or just add all of the dressing ingredients into a jar with a lid and shake until combined.


You can thinly slice the cauliflower, apples and celery or cut them into small cubes.

Any toasted nut or seed is delicious in this recipe.
