“Starbucks” Pumpkin Bread with Crumble Topping

Good morning! I hope that you had a great weekend. The weather was beautiful so I spent a quiet weekend reading and relaxing and then did a little baking.

I LOVE pumpkin and the more I can use it tin the Fall the he better. Pumpkin bread is a favorite around my house and I know that many of you really enjoy the spicy pumpkin bread from Starbucks so when I came across a few “copy cat”  Starbucks pumpkin bread recipes on Pinterest I thought I would try one instead of my standard recipe.

This recipe did turn out very similar to the bread at Starbucks, it is delicious, moist and has the perfect amount of spices. I think the “secret” ingredient is the cardamon, I do not usually add that to my recipes but I think it makes a great addition. I also added a little crumb topping, for no other reason than that I had some leftover from another recipe, but it does make the bread buttery and delicious.

Starbucks Pumpkin Bread with Crumb Topping

Recipe from: Copy Cat Recipes

Ingredients

Crumble topping:
1 cup all-purpose flour
1/4 cup brown sugar
1/4 cup sugar
7 tbsp cold. butter

Directions

Preheat oven to 350 degrees. Prepare a 9x5x3 loaf pan with cooking spray and set aside. In a large bowl add the flour, sugar, salt, baking soda, all spices. Shift the dry ingredients and set aside. In another bowl mix the 2 eggs, the oil, and the vanilla then pour the wet ingredients over the dry ingredients and mix well. DO NOT OVER MIX. Pour into prepared pan and sprinkle with crumble topping. Then bake for 50-60 minutes or until a toothpick comes out clean when inserted into the center. Cool for 5 minutes in the pan and then cool on a rack.

NOTE: If you use pumpkin pie spice in place of the other spices use 2 teaspoons

Do you have a “go to” pumpkin bread recipe or a pumpkin recipe that you always make in the Fall or do you simply buy the Starbucks pumpkin laof? I am always looking for new recipes to try and although I have a nice long list of them on my Fall Pinterest board but I am always open to more.

I hope you have a beautiful day! Happy Fall!

  2. Oh what a cozy weekend you had, Elizabeth!

Ours was wonderful. We had guests over both days, I baked, but I also cleaned house which took up a lot of time, but it was worth it. White pumpkins are in my baskets, the air is crisp but still warm, and dear friends were in our home.

Enjoy your week as we start October! I cannot believe it, I just can't believe fall is supposed to be here! Anita

  4. I've never tried it, but the ingredients all seem very agreeable, and since I like other things with pumpkin, like muffins or pie, this would no doubt be delicious. It certainly looks that way!
