Welcome to Friday Favorites, a weekly series where I share interesting articles, books, fashion finds, recipes and more.

Good morning friends, happy Friday. It has been a busy week and we have a busy weekend ahead. Easter is Sunday, do you have your menu planned? Eggs dyed? Baskets ready for the Easter bunny to fill them?
The weather is going to be ugly, gray, rainy and cold but that will not dampen our spirits on this holiday weekend. Spending time with family and friends is the best antidote to dreary days.
Ok, on to Friday Favorites.
FRIDAY FAVORITES NO. 527
Food

Spring pea pasta with burrata is an easy and delicious meal you can make on a weeknight but is also fancy enough for a celebration. You might even want to add it to your Easter menu.

Carrots aren’t just for the Easter bunny, these roasted carrots topped with a fresh and zesty dill gremolata, crumbled feta cheese, and pistachios are a great addition to any spring menu and a wonderful way to use your harvest this summer.

At any celebration my plate is filled with 2 things, bread and dessert. I think I may make these homemade crescent rolls for Easter brunch.

Carrot cake is a must at my house on Easter, of you are gluten and vegan you will love this version. If you don’t feel like making a cake you could make these bars.

These Easter rabbit ear cupcakes are easy to make and cute too!

A few books that have been recommended, are available from First Reads with Amazon Prime and that I just finished.
In the summer of 1855, Sarah Brinton abandons her husband and child to make the long and difficult journey from Rhode Island to Minnesota Territory, where she plans to reunite with a childhood friend. When she arrives at a small frontier post on the edge of the prairie without family or friends and with no prospect of work or money, she quickly remarries and has two children. Anticipating unease and hardship at the Indian Agency, where her husband Dr. John Brinton is the new resident physician, Sarah instead finds acceptance and kinship among the Sioux women at a nearby reservation.
The Sioux tribes, however, are wary of the white settlers and resent the rampant theft of their land. Promised payments by the federal government are never made, and starvation and disease soon begin to decimate their community. Tragically and inevitably, this leads to the Sioux Uprising of 1862. During the conflict, Sarah and her children are abducted by the Sioux, who protect her, but because she sympathizes with her captors, Sarah becomes an outcast to the white settlers. In the end, she is lost to both worlds.
Eighteen years ago, teenage Amy fled England, pregnant and heartbroken, to start over in New Zealand with her parents. Now Chris, the love she left behind, has walked into her beloved café by the beach and thrown her life into turmoil.
