Banoffee Pie

Good morning! A happy Monday morning to you, I hope that you enjoyed the weekend. Mine was too short, very busy and cold. I like many am starting to whine about the long, weird winter. Lets either have Winter or Spring but not the heat on one day and then the air conditioning the next. This week it is going to be in the 70’s so maybe Spring is on the way.

We are going to be throwing a party soon and I was pondering what desserts to make, for me a party is all about the food, especially the desserts. I often make several, OK, many different things, cookies, brownies, mini-cupcakes and other bar type sweets along with a cake. I know it sounds like a lot but we never have anything left and people really enjoying having lots to choose from. 

One of the things that I want to make for my next party is this Banoffee Pie. Seriously, it cannot get any easier, a crust, bananas, caramel and cream. Done!

Banoffee Pie for those of you who are not familiar is an English dessert from the 70’s, not sure when it came to the US but I am happy that it did!

Banoffee Pie

11/2 cup graham cracker crumbs

10 tablespoons butter melted

2 cans sweetened condensed milk

11/2 cups heavy whipping cream

1/3 cup confectioners sugar

1 teaspoon vanilla extract

4 bananas

Preheat oven to 350. In the bottom of a 9″pie pan mix the butter and graham cracker crumbs, press into the bottom of the pan and up the side. Bake for 5 minutes, then set aside to cool.

Lower oven to 300, pour both cans of condensed milk into a 9×12 pan and cover with foil, then place in a water bath and cook for 11/2 hours.

Alternately, you can use this method here, which is what I use.

After the condensed milk is cooked to a golden caramel color, cool for a little bit. While waiting for the caramel to cool whip the heavy cream to stiff peaks, add the confectioners sugar and the vanilla.

Then spread half of the caramel into the crust, layer with sliced bananas, then more caramel and finally the whipped cream.

Note: I made this pie in a spring-form pan, not a pie plate that is why it is taller.

    I've never heard of Banoff pie, but it looks delicious and currently bananas are so cheap here. Guess what I'll be doing next weekend. 🙂
