Vanilla Dalgona Whipped Coffee Topped with Cinnamon

Good morning friends! How was your weekend? Mine was great; lazy, relaxing and of course sheltered at home. I am at times shocked by how fast and how slow time seems to be going. This week I find it hard to believe that it will be July in a few days, it seems like only yesterday were celebrating a solitary Easter and waiting for warm summer days. 

I have been experimenting a lot lately in the kitchen, perhaps because I find myself trying to escape the ever present depressing news, in any case I discovered this interesting coffee drink recently. I do not typically drink or even like coffee but I enjoyed this refreshing summer drink. It is basically whipped coffee served over iced milk. 

Dalgona coffee has been making the rounds on social media lately but it is originally from South Korea, you can make it cold or hot and you can use regular milk or nut milks as well, you can serve this whipped coffee over hot chocolate as well which is how I like it. 

Vanilla Dalgona Whipped Coffee with Cinnamon

3 Tablespoons boiling water

1 Tablespoons granulated sugar

2 teaspoons instant coffee powder

1 cup almond milk

1/2 teaspoon vanilla extract

cinnamon for garnish

In a medium bowl mix the boiling water, sugar and instant coffee, mix until just combined. Then whip with an electric mixer for two minutes. 

Pour the milk and vanilla in a glass and mix, add ice, then spoon the whipped coffee over the top, sprinkle with cinnamon then mix just before serving. 

Enjoy with some cookies or a pice of cake.

    That sounds delicious Elizabeth ….. I shall definitely make some. We did have temperatures of 32C last week but it’s cooled down a bit now. I’m sure we will have more hot weather so that drink will be perfect. XXXX
