This simple and healthy celery, apple and cauliflower salad is easy to make, crunchy and delicious all year long.
Celery Cauliflower and Apple Salad with Blue Cheese
In the summer I love eating crisp salads on hot days. Typically I add strawberries or blueberries to my salads but on a hot day recently they only thing I had was a bowl of Granny Smith apples, a fresh head of cauliflower and a couple of stalks of celery leftover. This crisp and delicious celery cauliflower apple salad with blue cheese and nuts is the end result. It is now my favorite salad and I eat it about 5 times a week.
Ingredients for Celery Apple Salad
A simple salad can be made easily with the fruits and vegetables of the season. This celery salad is perfect for pot lucks, picnics and of holidays with the addition of seasonal cheese, nuts and fruits. It’s a great way to add fibre and vegetables to your diet. Not to mention it tastes delicious.
- Raw cauliflower
- Celery
- Tart Granny Smith apples
- Crumbled blue cheese
- Toasted cashews
- Apple Cider Vinaigrette
Directions for Celery Apple Salad
In a large bowl combine thin slices of apple, thinly slices cauliflower florets and thinly sliced celery. Mix gently. Then add the toasted nuts and a sprinkle of blue cheese. Serve the dressing on the side so that individuals can dress it the way they like.
In a small bowl mix the apple cider vinegar, maple syrup or honey, dijon mustard, sea salt, fresh ground black peppe. Drizzle in the olive oil and whisk until combined. Or just add all of the dressing ingredients into a jar with a lid and shake until combined.
Variations
This salad is a great side dish any time of year and you can change it up with all sorts of additions including:
- red grapes
- hard-boiled eggs
- green or red onion
- dried fruit, cranberries, raisins
- walnuts, cashews, pistachios, pecans
- seeds, pumpkin or sunflower seeds
- pink lady or honey crisp apples
How to Store Leftover Salad
Store leftover salad in an airtight container or tightly wrapped with plastic wrap in the refrigerator. It is not recommended to freeze salad.

1 small head of cauliflower, thinly sliced

5 stalks of celery, sliced on a diagonal
1/4 cup of toasted cashews
1/8 cup of crumbled blue cheese
For Vinaigrette
1/4 cup apple cider vinegar
1 teaspoon honey or maple syrup
1/2 teaspoon Dijon mustard
freshly ground pepper to taste
1/4 cup extra virgin olive oil

Notes
You can thinly slice the cauliflower, apples and celery or cut them into small cubes.
Any toasted nut or seed is delicious in this recipe.
