Blueberry and Grapefruit Salad with Fresh Herb Vinaigrette

Good morning friends, it is going to be a beautiful day here and I am looking forward to a long walk at the ocean this morning. Now that most of the kids are back at school the beaches are quite empty and it is so peaceful. I do love the solace of an empty beach. 

Yesterday, for lunch I made this blueberry and grapefruit salad with herb vinaigrette dressing; I am soaking up all of the flavors of summer as well as using up the copious amount of fresh herbs that I have from my neighbor. 

Summer Salad

As with any salad there isn’t really a recipe, you simply wash your greens, add whatever vegetables, fruit and nuts that you like and then drizzle with dressing. In this case I used fresh blueberries to add a little sweetness, grapefruit slices for a little bit of tartness, and almonds for a little crunch. 

Blueberry & Grapefruit Salad

6 cups mixed spring greens

1 grapefruit peeled and cut into segments

1 cup fresh blueberries

1/4 cup sliced almonds

garnish with hemp hearts

Divide the greens between the bowls, top with the berries, and grapefruit slices, sprinkle with sliced almonds and hemp hearts. Prepare the dressing and drizzle the salad, enjoy. 

This will make 2 large salads or 4 small. 

Fresh Herb Vinaigrette Dressing

1 cup freshly squeezed lemon juice

1/3-1/2 cup of honey(to taste)

2 Tablespoons dijon mustard

2/3 cup olive oil

1 teaspoon fresh chopped thyme

1 teaspoon fresh chopped rosemary

1 teaspoon fresh chopped basil

1/2 teaspoon fresh chopped mint

fresh ground pepper and salt to taste

Place all ingredients in a jar with a lid and shake vigorously. This recipe will make more than you need for the salad but you can use it on other salads, on chicken breast, or drizzled onto vegetables, pasta salad and more.

    I see some beautiful blue and white pitchers there – but must not be enticed into buying anymore china – am getting serious about downsizing this month!!!

  2. Looks delicious and certainly nutritious. I haven't had an orange or a grapefruit for probably 30 years due to acid reflux. Kind of miss orange juice.
