Good morning friends, I am up and at it early this morning because we have another storm coming and I want to get to the store to stock up.  We are supposed to get snow Friday, tonight ice and rain, so pretty much a repeat of last weekend. Hopefully we will get more snow than ice and rain. Whatever the case I will be staying put for the next few days with some comforting soup, a pile of books and my pups to keep me company.

Do I need to soak the beans?

No, you do not need to soak the beans. If you feel more comfortable soaking the beans you certainly can. To do that, you pick through the beans to get rid or rocks and debris then rinse with cold water. Place the beans in a bowl and add 5 quarts of water, let soak overnight. Then drain the beans and discard the soaking liquid.

Slow Cooker Ham and Bean Soup

Ingredients

1 pound great northern beans, rinsed and drained

4 carrots peeled and chopped

4 stalks of celery, chopped

3 cloves of garlic, minced

1 small yellow onion diced

1 large ham bone

7-8 cups of low-sodium chicken broth or water

2 bay leaves

2 sprigs of thyme

salt and pepper to taste

Directions

Place the dried beans in a colander, rinse with cold water and sort out any debris. Place the beans in your 6 quart slow cooker. Then add the carrots, celery, garlic, and onion. Nestle the ham bone into the center, add the bay leaves and the thyme. Cover the ingredients with the broth or water. Cook on high for 6-7 hours or until beans are tender. Remove the ham bone and pull off the meat, add the meat back to the pot and stir.

If your soup is thin you can use an immersion blender to blend a few of beans and make it thicker.

Note: You can also use 2 ham hocks if you do not have a ham bone, you can also add extra chopped ham if your bone was not very meaty. If you make the soup a day ahead of time it will be very think and you might need to add a little stock or water to thin it out.

  1. Great post ! Nothing like a good bowl of soup and some crusty bread on these cold winter days. I make a bean soup similar to this – but add spinach, no ham. We love soup. Just bought a Costco chicken and will eat several meals from that before using the carcass for soup. I just can’t throw that out knowing it can be turned into delicious chicken soup! Stay warm and have a great weekend!

  2. This looks so good and easy! It may be happening today! Thanks for your inspiration, Elizabeth. Stay safe and warm.

  3. I love soup, Elizabeth. And could easily live on it year round. When I was growing up my dad would occasionally get out a pot to soak white beans for what he called Navy Bean Soup. I still make a variation of it, but I don’t soak the beans either. And I don’t use a crock pot … but I really need to start doing that. Anyway, I learned this trick from Jane Brody decades ago …. rinse your beans and put in a pot covered with water. Bring beans to a boil for 2 minutes. Turn off heat, cover pot and let sit for one hour. Beans will be ready to go. I’m going to give your recipe a try … in the crock pot! xo

    1. Juliet, I love that your dad made navy bean soup, that is a delicious soup and a wonderful memory of him. I love cooking in the crockpot. There are so many great things you can make in it and it just makes dinner so much easier. I love your bean tip, I have it written done for later. I hope you have an amazing day.

  4. We are in for more snow this weekend, so it will be the perfect time to make soup. This one looks so hearty and flavorful. I can’t wait to try it. Thank you for sharing. Pinned!

    1. I love snow! We had a few inches last weekend but it melted in two days. This week we will be getting a lot of rain from the Nor’easter. Enjoy the snow and stay safe.
